Albertans take a keen interest in the art of cooking and instructors from the school are frequently invited to display their talents on television shows. Above, Chef Reg Carstairs describes the preparation of one of his favourite dishes for a local T.V. audience. Alberta, conscious of its natural splendor, which attracts visitors from far and near, is constantly reminding its restaurateurs of the maxim that while superb scenery will attract tourists, only good food will keep them coming back.
