Fresh from Nipissing's waters, a catch of rubbery-looking sturgeon is cleaned (below) [photograph number 67822] and the roe removed. Out of catch of fifty fish, three might contain roe, accounting for the high retail price of $16.00 a pound for this delicacy. Average daily catch sees some 50 to 60 40-pound sturgeons boated.
